Cooking with Barbara
Apple Fritters
By Barbara Walker

We used to go to Sevierille, Tennessee to Apple Valley Road to get apple products. Apples used to be very affordable in the season, now they never come down in price. We all grew up with the saying " An Apple an Day, Keeps the Doctor Away". Research now agree and say. They help keep us healthy, especially for digestion. I haven't been back in the last few years so they may be out of business.

They had this recipe for free. They are small fritters and not like apple pies.
Apple Fritters
Combine in a bowl, 1/2
cup of milk, one egg, and 2
tablespoons margarine, with
1 teaspoon vanilla. Add 1/2
teaspoon grated orange rind
and 2 Tablespoon orange
juice. Add 1 cup finely
chopped apple.
Sift together 1 1/2 cups

flour, 1/4 tsp. salt and 3/4
tablespoon baking powder,
with 1 tsp. cinnamon. Add 1
cup sugar. Add this to milk
mixture.
Drop by spoonfuls in oil
that is medium hot. If it is
too hot thy will burn before
cooking the apples inside.
Cook several minutes, turning
once until brown. Drain
on a paper towel and sprinkle
with sugar while warm.
