Low Country Cookies

I watch the Food Network quite often. I am interested in new recipes and the way they do things. Most of their recipes are o.k. but not always. When I have a failure or one that is not so good, my son says," Ha! Another Food Network failure!" Some of the newer recipes just don't sit well with him, he likes the food he grew up.

This recipe is from Paula Deen who lives in Savannah, one of my favorite places to visit. There is so much to see there and the food is wonderful. Paula Deen has a wonderful restaurant there too, and people flock to it. While in Savannah I enjoyed walking along the river front, and all the wonderful places to eat. If you haven't been it's a Must see!

Ingredients for filling:
1 - 16 ounce box graham
crackers
12 tablespoons butter ( 1 1/2 sticks)
1 cup of sugar
1 egg
1/2 cup milk
1 cup chopped pecans
1 cup or 3 ( 1/2 ounce cans shredded coconut

Instructions:

For the filling : Line a 13 by 9 -inch pan with whole graham crackers.

Melt the butter in a saucepan and add sugar. Beat the egg and milk together; add to butter mixture.

Bring to a boil, stirring constantly. Remove from heat. Add the nuts, coconut, and 1 cup graham crackers crumbs. Pour over the crackers in the pan. Cover with another layer of graham crackers.

For the topping, beat all ingredient together and spread over the layers of crackers.

Chill. Cut into squares.
