Cooking with Barbara

On my many trips to England to visit my friends in Yorkshire, they often served me Shepherd's Pie. Anne and Doreen live in a little village called Bellbusk. They used to run small store where you could buy fresh trout, caught by the villagers and eggs and milk. They also had a small Cafe.

Yorkshire is the most beautiful counties in all of England with the Moors, valleys and Dales.
Shepherd's Pie
1 small onion
1 1/2 pounds ground beef or
left over Roast
1 1/2 cups mixed vegetables

6 large potatoes
salt and pepper
1 1/2 cups milk
5 tablespoons butter
1/2 cup sour cream
2 cups instant biscuit mix

Beef layer- Saute onions in 2 tablespoon butter.

Add ground bee or roast. Cook several minutes.

Add salt and pepper and vegetables .

Potato layer- Cook about 6 large potatoes until done, whip

them adding butter, 1/2 cup milk and sour cream.

Spray a 9 x 12 inch pan or similar casserole dish.

Layer potatoes on bottom, then meat mixture.

Combine biscuit mix and 1 cup milk. Mix should be thin.

Pour over meat and vegetables.

Bake 350 degrees for 35 to 45 minutes or until golden brown.
