Chinese Chicken!

This is a good variation of Chicken Salad. If you like Chinese Food, you will surely like this.
Chicken Chinese Salad
3 cups cooked rice
1 cup celery sliced
1 cup bean sprouts
1/2 cup fresh mushrooms
1/4 cup diced bell peppers
2 teaspoons soy sauce
2 teaspoons ginger
1 cup cooked chicken
8 ounces cooked chicken
8 ounces water chestnuts
drained
1/4 cup sliced green onions
3 teaspoons lemon juice
2 teaspoons sesame oil or regular
oil
1/4 teaspoon pepper
Combine rice, chicken, celery, chestnuts, bean sprouts, mushrooms, onions and peppers in a large bowl. Combine lemon juice, soy sauce,oil, ginger and peppers in a jar with a lid. Shake well and pour over the rice mixture, toss lightly, serve on lettuce if desired.
